That’s why we put our heart and soul into sourcing incredible local ingredients and championing local produce. This means offering the freshest vegetables from Beechlawn Organic Farm, Burgers from Liam McCormack, St Tola’s Goats Cheese, Glasson Mushrooms, Steamed Lissadell Mussels, our chef’s own organic pork and Duncannon Smoked Salmon, a gold medal winner at the Great Taste awards.
And then there are our steaks… We make a point of serving Irish Hereford Prime which is renowned for its succulence, consistency and exceptional flavour. Irish Hereford cattle are raised with compassion and care on small farms, living unstressed lives as they graze on lush grassland. Nature cleverly transforms this into an amazing eating experience, whatever the recipe.
